Recipe Sweet Potato and Chickpea Cakes
You will need:
Sweet potatoes (around 400-500g)
Chickpeas (around 400g - equal to a tin)
Plain Flour
Coriander
1 onion 
Grated parmesan 
Oil Spray
Baking Tray and Baking Paper 

Optional: Sweet Chilli Sauce and Mixed Salad

First step is to peel and chop the sweet potatoes. Then boil them for roughly 10 minutes. Drain off and mash them until they are smooth. Put the bowl of sweet potato mash in the fridge to cool for half an hour.

Next step is to mash the chickpeas in a bowl. Finely chop the onion and coriander. 

Once cool add the chickpeas, onion, coriander, 2 tablespoons of parmesan and 2 tablespoons of flour to the sweet potato. Season as you wish.

Next line a baking try with baking paper. Section off your mixture into patty shapes, sprinkle a little more parmesan on top. Spray your oil on top to help them brown.

Place them in the oven for 30 minutes, turning them over half way through. After half an hour you'll have your lovely cakes. Add some chilli sauce to the side and garnish.
